We were engaged by EY Australia and the 200 George St Mirvac Building community for a very special dinner. 200 George is one of Australia's most environmentally advanced and sustainable buildings. Anyone visiting the building should have a chance to be immersed in these values.

By bringing green initiatives into the building, including waste free kitchens, farms in the basement and microgreens for all of the floors there is a very real chance this same care for the environment will cultivate beyond its four walls, increasing the entire community’s wellbeing and connection to place.

Our Cultivate 'plant menu' aimed to demonstrate the tactile and ethereal qualities that will return to this community by growing this respect for nature in the building’s very pockets, and in turn, into people’s daily lives and homes.

Guests dined where florals and edible plants deliberately peeked up and out from EY kitchen's crockery and dishes. Luckily Chef trusted us with them! Each plant was chosen as it could either be replanted downstairs in the building basement veg patch, taken to the kitchen for reuse, or planted in the garden in the future being considered for the building. We chose flowers that go well on rooftops (like flannel flower!)

Edible microgreens grown by Farmwall downstairs guests added to their dishes during the evening with their own snips including amaranth, cabbage and radish. Straight after the event we left the herbs from our local Randwick Community Council downstairs so Farmwall/Mirvac Cultivate could plant them in their city farms.

LOKALE BLUMEN (~ LOCAL FLOWERS & WEEDS):

Artichokes from Bilpin Blossom Farm, Australian Native Wildflowers from Craig Scott, Randwick Community Council for herbs, Serena and Jono at Farmwall supplied the microgreens.
